After more than 20 years managing and owning restaurants, Christophe Descarpentries recently shifted gears to take on the challenge of large-scale catering as an executive chef at UNM.

Descarpentries believes dining is entertainment, and he brings a joie de vivre (joy of living) to all of his endeavors. Descarpentries was the owner, manager, and chef of P’tit Louis Bistro, named for his son, in Albuquerque, New Mexico from 2009-2015. He also opened the popular Le Deauville restaurant in Lexington, Kentucky in 2005, which made sidewalk dining a citywide trend and became a social hub of its horse crowd.

Born and raised in a small town in the Lorraine region of France, Descarpentries moved to New York City in 1997 where he developed a love of the restaurant business, working and managing places like Le Pescadou, La Goulou, and Orsay. He also managed and was the events director for Provence in Soho for 3 years, where he put on his own wedding reception.

The University Club began serving the creations of Chef Christophe this semester and the buffet menu has received a very positive reception from members and guests. The University Club serves a buffet 5 days a week and all the buffet food is made by the culinary team at UNM Catering.

New entrees are created for each month to keep your lunch exciting. Days of the week are assigned a type of cuisine such as ‘Taste of Paris’ Wednesday or our ever changing Friday buffets that are determined from member suggestions on featured ingredients, themes, or countries.
